Warm Salad – Tomato and basil

* Great to have with Steak or Chicken.

 

 

Makes 6
1 punnet cherry tomatoes
1 clove crushed garlic
2 tbls capers rinsed and drained
4 tbls olive oil
2 tbls torn fresh basil

  1. Preheat oven to 200oC. Stir all ingredients except basil into in a bowl then tip into a baking dish.
  2. Cook in oven for ten minutes until tomatoes are hot.
  3. Remove from oven and tip into a serving bowl and scatter the basil over top and serve.

* You can also line the serving bowl with baby spinach leaves as they soften well with hot tomatoes on them.

* So good to have with steak or chicken if you’re used to having other styles of sauce, this is salt and sugar free.

* Very quick to make for a last minute dish.
