Vegetable tortillas
*Great lunchtime meal, party food or easy dinner.
Serves 4
½ medium size butternut pumpkin with skin and seeds removed, sliced
6 mushrooms thickly sliced
1 eggplant, sliced
3 zucchini, trimmed and sliced diagonally
½ small red onion, finely chopped
1 punnet cherry tomatoes, chopped
¼ bunch fresh parsley chopped
1 tsp olive oil
1 lemon juiced
8 small mission corn tortillas
100g ricotta
rocket leaves
Method
Spray frypan or chargrill and cook pumpkin, mushrooms, eggplant and zucchini over medium heat.
Mix the red onion, tomato, parsley, lemon juice and oil in a bowl together.
Chargrill the tortillas for a few seconds each side then top evenly with the grilled vegetables, salsa mix and then sprinkle the ricotta cheese and rocket leaves on top to serve.
