Vegetable kebabs

*kids love these, great side dish.

Serves 4

1 zucchini, peeled into ribbons (thickly peeled)
Punnet cherry tomatoes
1 red onion, cut into wedges
1 pkt haloumi cheese cut into 2cm cubes
1 tbls olive oil
1 tbls chopped oregano
1 tsp paprika

Method


Soak the bamboo skewers in water for about 10 minutes to prevent from burning on chargrill/BBQ. Preheat chargrill or BBQ on medium.
Place the zucchini in a heatproof bowl and cover with boiling water. Set aside for 2 mins then drain.
Place the zucchini, haloumi, tomatoes and onion in a large bowl. Drizzle with oil and sprinkle with oregano and paprika. Gently toss to combine.
Thread vegetables and haloumi onto soaked bamboo\ skewers and cook for a few minutes on each side until lightly charred.

*Serve with lean meat or chicken.
*Bacon pieces on the kebabs are a good way to change the flavour.
