Tuna rice
*so easy – so tasty – so good for you
Serves 4
425gm tuna in springwater – drained
2 cloves garlic chopped/crushed
1 onion, finely chopped
1 lemon zest and juice
1 cup brown rice
2 tsp low salt chicken stock powder
2 ½ cups water
1 big handful baby spinach leaves
cooking spray
pepper to taste
parmesan shaved to serve or crumbled low fat feta.
Method
Cook rice in rice cooker with water and stock powder.
Heat oil in large saucepan on medium heat, add onion and garlic.
Add in the tuna mixing thoroughly.
Once rice is cooked tip the tuna mix into the rice cooker along with the spinach, lemon zest and pepper to taste.
Leave lid on so spinach wilts, then serve onto 4 plates.
Add more pepper if required.
Top with either some shaved parmesan or crumbled feta cheese.
*Quick and easy and so very tasty.
