Thai-style beef salad
* light and delicious salad.
Serves 4
400g beef strips
1 punnet cherry tomatoes, halved
2 lebanese cucumbers thinly sliced
½ small red onion
½ bunch mint leaves
½ bunch coriander
2 red chillies, sliced
spray oil
Dressing:
grated rind and juice of two/three limes
2 tbs rice wine vinegar
2 tbs fish sauce
1 tsp stevia (test how it taste, you may want 2 tsp)
Method
Preheat frying pan on high heat.
Spray beef strips lightly with oil. Cook in three separate batches for a few minutes, then transfer onto a plate and rest.
Combine tomatoes, cucumber, red onion, herbs and chilli in a bowl.
Mix the dressing ingredients together and mix through salad, add beef strips and serve.
*great lunch or light dinner salad.
