Tasty chicken balls

* for that salad or soup that needs some protein added to it.

makes 16 – 20 balls

500gm chicken mince
2 garlic cloves crushed (or more if you like)
1 tsp crushed ginger
1 egg
1 chilli seeded and diced
1/2 diced red capsicum
some coriander chopped or parsley
cracked pepper to taste
olive oil or coconut oil

Method


Combine all the ingredients into a mixing bowl, then shape into about 16 small balls and refrigerate for as long as you can before cooking.
Heat a medium frypan, with oil and cook each chicken ball for about 4 minutes each side.

*serve with soup or  salad if you need to balance protein in the meal.
*Perfect post training meal.
*chicken can be replaced with either turkey or pork mince.
*can freeze these balls
*you can include these in an anti-pasta dish.
