Tabouleh
* excellent side salad or meal on its own.
Serves 4
Ingredients
1 cup raw quinoa (cook to packet instructions)
2 fresh tomatoes
big bunch parsley
½ medium size red onion
lemon juice
pepper
Method
Cook quinoa as packet directions then let cool.
Finely chop up tomatoes, parsley and red onion.
Combine all together and then pour lemon juice and pepper over to taste.
*Use as much parsley as you like and lemon juice. Basically it’s what taste you like, everyone is different
