Sweet potato Fudge

Ingredients

250gm Sweet potato peeled and cut into 3cm pieces
150gm red apple peeled and cored and cut into 3cm pieces
100 gm butter
6 pitted fresh medjool dates
2 eggs
80gm plain flour (or coconut flour)
¾ tsp baking powder
40gm raw cacao powder
1 tsp vanilla extract or paste
2-3 tbls dark choc chips

Method

1.Steam the potato and apple until soft
2.Grease and line square 21cm baking dish
3. Preheat oven to 160oC
4. Blend butter and dates, add reserved sweet potato and apple and mix
5. Add eggs, flour, baking powder, cacao, vanilla and blend
6. Pour into prepared tin and bake for 20 minutes, or until just cooked. Allow to cool and cut into squares.
