Superb strawberry protein slice

* delightful protein treat.

Serves 10

Base:
1/2 cup raw cashews
1 ½ cup desiccated coconut
2 scoops vanilla protein powder
8 dates
2 tbls chia seeds
1 lemon zest
¼ cup water

Topping:
1 cup cashews soaked
1 tbls honey
½ juice of lemon
150gm fresh strawberries
1- 2 tbls coconut oil
dash of vanilla essence
tiny pinch of salt

Method


Grease small loaf tin with baking paper (about 7 x 22cm)
To make base: – place all ingredients into a food processor and blitz until a bit sticky, then press into prepared tin.
To make topping: – strain the cashews and blitz with lemon juice until smooth, then add all the other ingredients and mix until all chopped .
Tip onto the the base, evenly spread out and then place in the freezer.
