Spinach, Kale & Feta Filo Pie
*Great Protein Meal
1 bunch silver beet – washed and use only a few stalks but all the green leaf
1 bunch kale – remove stalks
1 brown Onion – finely chopped
3 cloves garlic
½ block reduced fat feta
few sheets Filo
spray olive oil
METHOD
In a large saucepan, coat with spray oil and brown onion and garlic. Add Spinach and Kale and reduce heat and place lid on for it to reduce down. Spray pie dish and layer the filo on the bottom, drain excess water out of spinach mix and place in pie dish, crumble up feta and put a layer or two of filo on top. Place in moderate oven till filo browns. Serve with salad or have alone. You can also roll this mixer in the filo sheets to make spinach roll styles and they can be cut to mini size or meal size. These are freezable and great to grab when late home and dinner is not organized.
