Spicy Lamb

 * great family meal.

Serves 4

500g lean lamb steaks cut into strips
1/3 cup slivered almonds (toast under grill)
1 tsp crushed ginger
1 tsp crushed garlic
1 cup sliced onion
1 peeled and diced apple
1 tsp cardamom
1 tsp cumin
1 tsp coriander
1sp turmeric
2 tsp chicken stock powder
1 tbls tomato paste
1 tbls cornflour
1 x 375ml can coconut milk spray oil

Method


Spray a non-stick frypan with oil, sauté lamb, ginger and garlic until meat nearly cooked.
Add onion, and apple cook a minute longer.
Place all the spices and herbs with stock powder and tomato paste in the pan.
Stir the cornflour into the milk, then add that into the frypan – stir continuously until boiled.
Sprinkle the almonds over the top and serve.

*I serve on smashed cauliflower or brown rice.
*This is nice with chicken as well
