Spiced sweet potato
*side up with a favourite piece of lean meat or grilled chicken
Serves 4
1 kg sweet potato, peeled and diced (or charisma potatoes)
2 tbls coconut oil
1 tsp mustard any type
1 tsp dried or ground coriander
½ tsp turmeric
¼ tsp chilli flakes or paste
400gm can chickpeas rinsed and drained
1 cup plain yoghurt
Method
Cook potatoes in boiling water for 5 mins until slightly cooked.
Heat oil in pan over high heat, add potato and spices and stir for 4 minutes, until a bit crisp.
Add chickpeas and cook until they are warmed through.
Drizzle yoghurt over the top and serve.
Garnish with some fresh coriander if you like.
*family can have with naan bread and mango chutney.
