A go to meal anytime of the day

* a perfect vegetarian meal.

Serves 4

4 or 6 favourite vegetables sliced up lengthways
½ bunch of parsley (or as much as you like)
1 onion
8 eggs
3-4 tbls pure cream (optional)
1 tsp turmeric ( I use fresh turmeric)
2 tsp crushed ginger
1 tsp crushed garlic
cracked pepper to taste
mushrooms to layer on top (optional)
olive oil

Method

Heat oven to 200oC
Place all vegetables on a tray and roast in oven.
Chop up spring onion and parsley
Line the oven dish with olive oil.
Layer cooked vegetables in dish.
Scatter garlic, onion and parsley through the layers
Whisk up the eggs, cream, pepper, salt, crushed garlic, ginger and turmeric and pour over the vegetables
Layer with mushrooms
Cook in oven 35-40 minutes on 180oC.

*I serve with a green salad.
*I leave a serving aside for lunch the next day.
*Also can be made as a pie using puff pastry or filo pastry.
*Can also add bacon if you like
