Makes 10 rolls

10 rice paper rolls (small)
½ cup raw quinoa cooked in water with lemon juice
1 cucumber sliced and cut 8cm lengths
1 carrot sliced and cut 8cm lengths
lemon juice
mint leaves
some shredded chicken (optional)
Method


Place rice paper rolls – one at a time in water as per packet directions
Fill with 1- 2 tbls quinoa,(bit of shredded chicken if you have), two cucumber sticks, two carrot sticks, two mint leaves and squirt lemon juice over top.
Roll as per directions on packet, then make the next roll the same.
Place in fridge for a few hours before eating.

*serve with some plum sauce if you like, I enjoy on their own.
*perfect for a share plate.
