Red lentil patties
* vegetarian spicy meal.
Serves 4
2 tbls olive oil
1 onion diced
½ cup dried red lentils, rinsed and drained
3 tsp ground cumin
3 tsp ground coriander
1 tsp ground paprika
1 tsp ground turmeric
2 x 125g cans chickpeas, rinsed and drained
1 tbls almond meal
1 tbls sesame seeds
½ cup quick oats (rolled oats)
Lemon juice
Cracked pepper to season
Method
Cook lentils in a large saucepan of boiling water for 15 mins or until tender, drain well.
Heat oil in large saucepan on medium and cook onion for 5 mins until softened. Add cumin, coriander, paprika and turmeric and cook for a minute.
Place breadcrumbs in food processor until chopped, but not too fine as these are to coat the patties, put aside until later.
Place all the lentils, onion mixture, chickpeas, almond meal, sesame seeds and lemon juice in a food processor until smooth, season with salt and pepper.
Spoon out 16 patties with the mixture and roll in the chopped oats.
Place in fridge for at least 30 minutes to chill.
Cook the patties in a frypan on medium heat or alternatively you can coat with spray oil and bake in oven for 20 minutes.
4 patties per serve
