Raw carrot balls
* sweet treat, and share plate.
Serves 16
2 ½ cups walnuts
1 tbs chia seeds
1 tsp ground cinnamon
¼ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp sea salt
1 cup fresh dates, pitted
½ cup dried chopped apricots
1 large raw carrot, grated
1 tsp vanilla extract or vanilla bean
½ cup rolled oats
1 cup shredded coconut
Method
Place walnuts, chia seeds, cinnamon, ginger, nutmeg and sea salt in a processor and process until finely chopped.
Add dates and apricots, then process again until all mixed through.
Add grated raw carrot and vanilla then process again until all mixed (dough consistency).
Add the oats and mix through.
Break into 16 even pieces and roll into balls then roll over coconut and loose oats to coat.
Place in fridge for a few hours before eating.
*serve with greek yoghurt.
*good morning/ mid afternoon snack. (Be mindful of energy/calorie per ball)
*nice to take somewhere as a sharing plate.
