Quinoa Salad
Serves 6
Salad
1 1/2 cups Quinoa
1 medium head of broccoli, cut into small florets
50g baby kale, roughly chopped
2/3 cup mixed (combo) sprouts
1 avocado, diced
1/2 cup coarsely chopped raw almonds
1 small red onion, cut into thin wedges
Dressing
1/3 cup extra virgin olive oil
1/4 cup lemon juice
2 teaspoons honey
3 easpoons Dijon mustard
Salt and pepper to taste
Method
1. Cook Quinoa according to directions on pack. Place in a mesh sieve and rinse under cold water. Drain well and spread on a tray to cool.
2. Blanch the broccoli in boiling water for 2 minutes, drain and referesh in cold water. Drain and place into bowl with remaining salad ingredients. Add cooled Quinoa and gently toss to combine.
3. Place all dressing ingredients in a screw top jar and shake to combine. Pour over salad. Toss gently.
