Such a great alternative than bread.

I make these and top them with avocado and poached eggs.
I have them hot or cold.
These are a great snack or breakfast option that hold more nutrients than what a slice of bread would have.
Super quick to make.

Makes 8 – 10 patties

Ingredients

130 g tri-colour quinoa (make sure you soak it, and rinse thoroughly)
850 g water, plus extra for soaking
½ tsp salt
80 g Philly cream cheese
2 tbls Plain flour
3 eggs
30 g white chia seeds
2 spring onions/shallots, cut into thin slices (3 mm)
¼ tsp ground black pepper

Olive oil or coconut oil, for frying


Method 

  1. Cook quinoa as per packet directions add some salt.
  2. Place cheese into food processor or Thermomix and chop: 
    Add flour, eggs, chia seeds, spring onions/shallots, pepper, some salt and cooked quinoa and combine throughout.
    Set aside for 15 minutes to allow mixture to firm.
  3. Place a large frying pan over medium heat and add oil.
    Divide mixture into 8 portions (approx. 2 tablespoons each) and shape into patties.
    Working in batches, fry patties for 7-8 minutes on each side or until golden.
    Transfer into a thermal serving bowl or onto a plate and cover to keep warm.

Smashed avocado

2 avocados, flesh only
½ lime, juice only
1 pinch salt

or

Poached eggs
