Quinoa and Oat bars

*a muesli bar without added sugars or preservatives

½ cup quinoa – raw
1 cup rolled oats
¼ cup shredded coconut
¼ cup sunflower seeds
½ cup chopped almonds
½ cup raisins or preferred dried fruit
¼ cup ground flaxseed
¼ cup chia seeds
3 tbls nut butter
1 tbls rice malt syrup
1 tsp cinnamon
1 tsp cardamom
1 tsp vanilla extract
boiling water
pinch salt

METHOD


Preheat oven to 160oC and line baking tray with paper
Line a slice tray with baking paper.
Combine quinoa, oats, sunflower seeds, chopped almonds and coconut into a bowl – mix up and place on baking tray and place in oven for 10 minutes until lightly browned.
Place nut butter and syrup into a heatproof bowl and microwave for 20 seconds, mix in cinnamon, cardamom and salt until combined.
Add in chia seeds, flaxseed and raisins, then add a little bit of boiling water until all ingredients mixed together.
Place the toasted ingredients in and add water if needed, not too wet.
Tip into the slice tray and press down firmly, then refrigerate for at least 1 hour.
Pull out and slice into 12 bars

*I love this as a brunch morning snack.
*great for kids lunches.

*keep in fridge for 5 days
*can be frozen for 2 months
