Quick Haloumi & Grain Salad
Serves 4

Coconut oil
250g haloumi, thinly sliced
1 cup Quinoa
1 small red onion, thinly sliced
1 bunch radishes, thinly sliced
2 handfulls Baby Rocket
1/2 cup mint leaves
1/2 cup flat-leaf parsley leaves
1/3 cup (40g) pecans, toased, coarsely chopped
2 tbs olive oil
1 tbs Apple cider vinegar
1 garlic clove, crushed

Method


1. Place a bit of coconut oil in medium frying pan. Cook haloumi over medium heat for 1-2 mins each side or until golden.
2. Meanwhile, cook quinoa following packet directions.
3. Combine the haloumi, quinoa, onion, radish, rocket, mint, parsley and pecans in a large bowl. Place the oil, vinegar and garlic in a crew-top jar and shake until well combined. Season. Drizzle over the salad and gently toss to combine.
Serve immediately.
