Pumpkin pancakes

 

Ingredients:

 

180gm pumpkin cut into pieces
150gm water
180gm rolled oats
1 tsp vanilla extract
1 tbls chia seeds
30gm pure maple syrup (plus some to serve if you wish)
1 pinch salt
1 tsp baking powder
Extra virgin olive oil or coconut oil to fry in
Favourite pancake toppings of choice

 

Method:

 

  1. Steam pumpkin for about 10 minutes, mash until smooth consistency and let cool.
  2. Place rolled oats into food processor and blitz
  3. Add vanilla, syrup, salt, baking powder, reserved cooled pumpkin and water, mix until all combined
  4. Heat a large frypan at medium heat and add oil. Working in batches pour mixture into pan and cook each side for a few minutes until golden brown.
  5. Serve with your favourite pancake toppings
