Pumpkin pancakes
Ingredients:
180gm pumpkin cut into pieces
150gm water
180gm rolled oats
1 tsp vanilla extract
1 tbls chia seeds
30gm pure maple syrup (plus some to serve if you wish)
1 pinch salt
1 tsp baking powder
Extra virgin olive oil or coconut oil to fry in
Favourite pancake toppings of choice
Method:
- Steam pumpkin for about 10 minutes, mash until smooth consistency and let cool.
- Place rolled oats into food processor and blitz
- Add vanilla, syrup, salt, baking powder, reserved cooled pumpkin and water, mix until all combined
- Heat a large frypan at medium heat and add oil. Working in batches pour mixture into pan and cook each side for a few minutes until golden brown.
- Serve with your favourite pancake toppings
