Pumpkin and pine nut sauce

*good on wholemeal pasta.

Serves 4

4 cups raw pumpkin diced
½ cup finely diced onion
2 1/2 tbl pine nuts
1 clove garlic crushed
1 tsp turmeric
1 tbl tomato paste
1 tsp cumin
1 tsp dried coriander
2 tsp vegetable stock
1 x 375 can coconut milk
season with pepper

Method


Toast pine nuts in frypan briefly
Steam pumpkin for 5 minutes.
In a non stick sauce pan spray oil and sauté onion and garlic, add spices, herbs and stock powder with tomato paste.
Stir in milk, add in pumpkin.
Serve on top of cooked wholemeal pasta and sprinkle pine nuts over top.

*very good carb meal.
*can add chicken to this dish
