Pulled spicy beef
*family favourite.
Serves 6
1.2kg lean rump steak
1 onion chopped
3 clove garlic, chopped
1 tsp Cajun seasoning mix
1 tsp cumin
1 tsp paprika
1 jar salsa medium or hot of your choice
1 x 400can red kidney beans, rinsed and drained
1 tsp olive oil
Method
Brown meat in a frypan
Place salsa, garlic, onion, and spices in a slow cooker and stir together and then add the meat, making sure the tomato mixture is covering meat.
Cook on low for 8 hours or high for 5 or 6 hours.
Place the beans in half hour before you serve and take the meat out and pull it apart with two forks, then add back into the slow cooker and stir to combine.
*serve on mashed sweet potato with avocado and feta crumbled over the top.
*serve in a corn tortilla with corn and avocado.
* I leave the lid off the slow cooker for that last half hour to thicken up the salsa.
