Protein nut muffins

* Fulfilling muffins that’s not high in sugar

Makes 8

½ cup rolled oats or quinoa flakes
1/3 cup brazil nuts
1/3 cup almonds
1/3 cup cashews
1/3 cup walnuts
1 scoop protein powder
¼ cup sunflower seeds
2 tbls chia seeds
1 zucchini, chopped
1 cup Kale, chopped
2 eggs

Method


Preheat oven to 180oC Line muffin tray with paper muffin cups ( or spray muffin tray)
Place all the ingredients(except sunflower seeds) into a food processor, blitz until combined then add the sunflower seeds and stir to combine these.
Divide the mixture into the muffins cases and bake for 20 mins. (or test with skewer to make sure cooked inside).
Cool for a few minutes then completely cool on wire rack.
