Prawn & Kale Stir-Fry

Serves 4

1 tbs olive oil
1kg raw green prawns, peeled, tails intact
2 garlic cloves, crushed
100g snow peas, trimmed
2 handfulls Chopped Kale
1 long red chilli, thinly sliced
1/4 cup (60ml) chicken stock/broth
1 tbs balsamic vinegar
2 spring onions, thinly sliced diagonally
1/2 cup coriander leaves

Method


1. Heat oil in a wok or large frying pan over high heat. Stir-fry prawns, in batches, for 2-3 mins or until prawns curl and change colour.
2. Add the garlic,snow peas, kale and chilli and stir-fry for 2 mins or until kale just wilts. Add the stock and balsamic vinegar and stir-fry until heated through. Sprinkle with spring onion and coriander.
