Porridge with banana, blueberries and honey
*best breakfast pre training or race day
Serves 2
100gms oats
500ml skim milk
15g walnuts, chopped
15g flaked almonds dash cinnamon
1 banana
60g frozen blueberries
honey to drizzle
Method
Place milk, cinnamon and salt in large saucepan over a medium heat.
Add oats and bring to a gentle boil then reduce heat and cook for 4-6 minutes, stirring occasionally.
While oats are cooking, peel and slice banana diagonally. Thaw berries.
Add walnuts and almonds to the oats for the last minute of cooking. Check consistency; add more milk for runnier consistency if desired.
Spoon porridge into bowls, top with sliced bananas and blueberries and finish with a drizzling of honey
