Pork, sweet potato and bean curry

*one they all enjoy

Serves 4

500gm pork mince
1 onion chopped
2 cloves garlic chopped
1 medium sweet potato diced
1 tsp turmeric
1 tsp chilli flakes
3 tsp dried coriander
1 tsp crushed ginger
1 tsp cardamom pods
3 bay leaves
2 tsp tomato paste
1 x 200g can chopped tomatoes
150gm green beans trimmed cut 3cm long
ΒΌ cup raw cashews
1 tbls olive oil

 

Method


Heat oil in pan on medium heat, cook onion for 5 minutes, add garlic cook 1 minute.
Increase heat to high and add pork mince, cook till brown.
Add all the spices, herbs, tin tomatoes (half 400 can), tomato paste and sweet potato, cook for 10-15 mins.
Take out bay leaves.
Add the beans and cook for 3 minutes.
Sprinkle with cashews after you serve.
Serve with brown rice or cauliflower mash, or you can add a tbls greek yoghurt.

*family can have with roti bread and mango chutney.
*If using a slow cooker, brown mince then place all the ingredients in slow cooker on low for 6 hours, the flavours are incredible.
*perfect to keep some aside for a meal later in the week.
*this meal can be frozen for 2 months.
