Pork lettuce cups
*ideal meal after workout, high protein.
Serves 4
1 tbsp coconut oil
1 brown onion, chopped
1 garlic clove, crushed
500g pork mince or pork steaks (fat on)
8 mushrooms, thinly sliced
1 carrot, peeled, coarsely grated
1 zucchini, coarsely grated
2 tbsp hoisin sauce
8 iceberg lettuce leaves
Method
If using pork mince:
Heat oil in a large frying pan over medium heat.
Add onion and garlic and cook, stirring until onion softens.
Add the pork and cook breaking up the mince so no big lumps and cook for about 5 minutes.
Add mushrooms, carrot and zucchini, then mix in the hoisin sauce for a couple of minutes.
Spoon mixture into lettuce leaves evenly.
If using pork steaks, place all ingredients into slow cooker except the lettuce leaves, (you can cut up an apple and place it in there for extra flavour), cook on low for 8 hours, then shred the pork steaks with a fork, place shredded pork back into the slow cooker with all other ingredients and then scoop onto lettuce leaves. *I leave a serve to have for lunch the next day after big workout.
