Peanut protein slice

Makes 12 slices

Base:
1 cup rolled oats
1/3 cup almond meal
1/3 cup melted coconut oil
2 scoops vanilla protein powder
¼ cup nut butter you prefer
1 tbls chia seeds
dash vanilla essence

Nougat:
1 tbls rice malt syrup
5- 6 tbls nut butter or ½ of quantity can be peanut butter
1 cup roughly chopped nuts you like (almonds, peanuts, macadamias)

Top:
100gm dark chocolate

Method


Line a small loaf tray with baking paper.
Place all the base ingredients in a food processor and mix until a dough consistency. Then press into prepared tin and refrigerate (if it looks dry add a few tablespoons water?)
Melt the syrup, and nut butter in saucepan or microwave. Add the chopped nuts and then place over the base layer.
Melt the chocolate and poor over the top.
Place in fridge until set, slice into 12 pieces.

 

*when slicing heat the knife in boiling hot water so as the chocolate doesn’t crack
*perfect after a workout because body will burn up the energy straight away.
*keep in fridge in air tight container for about a week.
*Freezable and great for taking a plate for your workout buddies get together.
