Pea and mint fritters

 

Ingredients:

2 spring onions
2 garlic cloves
20gm olive oil
60gm chickpea (besan) flour – I use plain flour
½ tsp bicarb soda
½ tsp salt
Sprigs of mint (about 6-8)
300gm frozen peas
Mayo
Lemon (sliced to serve with – optional)

 

Method:

 

  1. Place spring onions and garlic in food processor and chop
  2. Add flour, bicarb soda, salt mint and peas, blend again
  3. Heat a large frypan with generous amounts of olive oil, working in batches, place a few tbls of mixture into fritters, cook a few minutes on each side until golden brown.
  4. Serve with mayo and lemon slices if you like.
