Oats, Quinoa and Berry Pancakes
*perfect brunch style meal or after a hard training session.
¼ cup (30g) rolled oats
¼ cup quinoa flakes
50g frozen berries (thawed)
75g plain yogurt
dash cinnamon
TOPPING
banana (berries better option – less sugar)
dash chia seeds
squirt honey (pure cream better option – less sugar)
METHOD
Place all ingredients in processor until a soft texture, spoon half the mixture into a frypan with either coconut oil. Flip once cooked.
Mixture makes two pancakes, top with banana sliced, chia seeds and honey.
I love this as a brunch or after training session meal as it’s great recovery meal.

* sugars high due to banana and honey, but not added sugars in this recipe, so use berries and pure cream instead.
