Nutty Slice
* great snack and kids lunchbox or when you have to bring a slice
1/2 cup rolled Oats
1/2 cup chopped almonds, pecans, walnuts, hazelnuts or macadamia nuts.
1 cup desiccated coconut
¼ cup sesame seeds
½ cup sunflower kernels
½ cup pumpkin seeds (pepitas)
½ cup raisins
2 tbls cacao
1/2 cup butter
1/4 cup coconut oil
1/4 cup nut butter (whatever style you like)
1/4 tps sea salt
dash cinnamon
1 tbls honey or rice malt syrup (optional)
METHOD
- In frying pan, mix the oats, nuts, coconut, sesame seeds, sunflower kernels and pumpkin seeds on a medium heat until golden brown. Set aside and then add raisins.
- Melt your butter, coconut oil, nut butter and honey in a saucepan over a medium heat, stirring constantly, then add to your dry ingredients and mix thoroughly.
- Spoon your mixture into a lined baking tray and leave to cool.
- Cut into snack sized bars. Best to store in freezer in individual pieces, so ready to grab on the go.* if on Keto diet eliminate the oats and honey but double the nut quantity (1 cup)
* if on Keto diet you may want to eliminate the raisins as well (extra sugar)Makes 24
