Mustard and honey chicken
* quickest meal to cook up.
Serves 4
1 cup sliced carrots
1 cup broccoli florets
1 cup sliced celery
500g raw chicken breast, lean diced
1 tsp crushed garlic
1 small onion
2 tsp chicken stock powder
4 tbl Dijon mustard
2 tbl honey
1 tbls cornflour/plain flour
1 x 375 can coconut milk
cracked pepper to taste
coconut oil
Method
Steam veggies for a few minutes, so they are just soft.
In a large frypan heat coconut oil and sauté chicken and garlic for a few minutes.
Add the onion and vegetables into frypan.
Add the stock powder, mustard, honey and mix well.
Place the flour in the milk first, stir up, then tip into frypan and continuously stir until boiled.
Add cracked pepper to taste.
*such an easy meal using simple ingredients.
