Mushroom stuffed with quinoa

* satisfying breakfast.

Serves 1

1 Portobello mushroom – stalk removed
1/2 cup cooked quinoa
¼ brown onion, finely diced
¼ red capsicum, finely diced
2 asparagus spears, sliced
some sundried tomatoes – sliced
½ tsp paprika
1 tsp coconut oil
dash vinegar
dash lime juice

Method


Preheat oven to 160oC.
Cook the quinoa according to packet directions
Mix vegetables, oil and spices into quinoa
Spoon the quinoa mixture into the mushroom
Bake in oven for 20 minutes or until mushroom is cooked
*healthy breakfast or lunch
*great protein meal
*can use any vegetable as filling with quinoa.
*brown rice can be used instead of quinoa.
