Moroccan fish

* a fish twist.

Serves 4

4 x 125g boneless white fish of your choice
3 medium size tomatoes, chopped and excess juice removed.
½ salad onion, finely diced
3 cloves garlic, crushed
3 tbl fresh basil leaves, chopped
2 tsp olive oil
2 tsp vegetable stock powder
2 tbl Moroccan seasoning
cracked pepper to taste

Method


Place tomatoes, onion, garlic, basil, stock powder, oil and pepper in a bowl and mix together.
Coat each piece of fish with the Moroccan seasoning, then pan fry in pan coated with a bit of oil. Reapply seasoning and oil for other side of fish before turning over.
Serve fish onto plates and top with tomato mixture.
Enjoy with a fresh side salad of your liking.

 

*If you’re not a fish fan you can use lean chicken breasts.
*Another great protein meal.
