Modern stuffed capsicums

* a perfect vegetarian meal, for lunch or dinner.

Serves 2

2 red capsicums
1 ½ cup cooked quinoa
1 clove garlic, crushed
½ red onion, finely chopped
1/3 bunch parsley
1 chilli chopped (optional)
1 small tomato chopped (optional)
good squirt of lemon or lime juice
40g low fat feta cheese
spray oil
Method


Preheat oven 180oC.
In a small frypan spray oil and cook onion, garlic and chilli.
Mix quinoa, parsley, onion, feta and tomato together, add black pepper to taste.
Stuff into deseeded capsicum, place onto a lined baking tray and place into oven.
Cover with foil for first ten minutes, then leave uncovered in oven for another 20 minutes.

*I serve with a small piece of chicken and broccoli.
*I also serve with a green salad.
*I make the two and have one the next day for lunch.
*Or make one for a special friend, it’s always nice to give others healthy meals.
