Minestrone Soup
* easy to make – easy to modify.
Serves 8
3 cups water (I like thick soup so add more water if you want)
3 cups chicken bone broth
1 cup celery, chopped
1 cup small broccoli florets
1 cup carrot, diced
1 cup zucchini, diced
1 medium onion, chopped
2 cloves garlic, chopped
1 x can diced tomatoes
1 x can kidney beans drained
½ cup tomato paste
some oregano – as much as you like
some dried basil – about a tsp or more
¼ cup quinoa or a little bit of brown rice
pepper to taste
Method
Place all ingredients into a huge saucepan and cook for 20-25 minutes, stirring occasionally.
I add broccoli in the last 5 minutes so it doesn’t over cook Season with pepper.
*Add any of your favourite vegetable
*I freeze my other servings.
*Nice to swap soups with your workmates, so make all different soups to share.
*Perfect lunch or light dinner
