Mexican dip
*tasty snack time and party food.
Serves 12 (snack sizes)
1 can refried beans
1 jar salsa (mild-hot, as you prefer)
1 tbls taco seasoning or use cumin, paprika
1 med avocado mashed
200gm low fat natural/greek yoghurt
½ cup tomato diced
½ cup capsicum diced
2 shallots chopped
some tasty cheese if you like.
Method
Mix bean and salsa together in a bowl and spread over the base of a pie dish.
Mix the avocado and the taco seasoning together and layer of bean mix.
Spread yoghurt over the top of avocado layer.
Sprinkle tomato and capsicum on top and a little bit of cheese if you wish (try not to).
*perfect for an afternoon snack with raw vegetables cut up.
*take a plate to a party
*Can have like a tapas style with grilled chicken strips.

*low GI (keeps you fuller for longer)
