Mediterranean chicken burger
* tasty dense burgers.
Makes 6 burgers
500gm lean chicken mince
2 garlic cloves crushed
1 small onion finely diced
¾ cup raw quick oats
½ cup semi sun dried tomatoes chopped
½ cup zucchini grated
2 tsp dreid oregano
½ cup fresh basil leaves chopped
¼ cup kalamata olives sliced
2 teaspoon chicken stock powder
cracked pepper to taste
Cooking spray
Method
Combine all the ingredients into a mixing bowl
Shape into 6 patties
Season with pepper cook on a medium heat frypan sprayed with oil for about 4 minutes each side.
*Homemade tatziki dressing goes well with this (natural yoghurt, finely chopped garlic and cucumber and squirt lemon juice)
*Quick oats can be replaced with quinoa flakes so less carbohydrates.
*Serve with brown rice and salad.
*Serve in a wholemeal bun with salad.
*Perfect post training meal.
*Chicken can be replaced with either turkey or pork mince.
*Freezable once cooked
