Meatballs in tomato sauce
Ingredients:
med-large brown onion cut into quarters
2 rindless bacon rashers cut into small pieces
2 slices day old bread (bakery)
Few stalks of parsley finely chopped
2 garlic cloves
1 red capsicum finely chopped
30gm parmesan cheese (optional)
500gm beef mince
1 tsp dried italian herbs
1 tsp ground sweet paprika
1 tsp salt
1 tsp ground pepper
Olive oil
Sauce:
Fresh tomatoes diced up or tin diced tomatoes
Oregano
Salt
Pepper
Roasted strips of red capsicum
Method:
- Place onion, bacon, parsley, garlic, capsicum and bread in processor and chop until fine.
- Add mince, dried herbs, paprika, salt and pepper and combine.
- Heat frypan with generous amount of olive oil, roll mixture into balls and place into frypan, turning regularly until cooked through. *or just brown them and add to next step for oven baked meatballs.
- Place tomatoes, and all sauce ingredients into blender and chop, then place in a oven proof dish add the cooked meatballs and heat in oven for 20 minutes.
* or you can just brown the meatballs and then finish cooking in the oven in the tomato sauce.
Serve with crispy onions and pita breads or side of vegetables.
