Lemon chia pudding

* simple meal for breakfast or snack.

Serves 1

250ml almond or coconut milk
2 tbls chia seeds
1 tbl shredded coconut
dash cinnamon
1 tsp vanilla extract
zest of lemon or lime
fresh berries to serve

Method


Place all ingredients except berries into a jar or bowl, mix well and leave to set in fridge overnight.
Serve with berries and some toasted coconut chips if you like.

*great breakfast after training session.
*add protein powder for post training meal if you like.
*good mid afternoon snack if training that night.
*chia seeds are a great source of fibre as well.
*if ketogenic meal limit the berries on top.
