Lamb Curry

* one of my favourites – everyone whom has made this loves this recipe.

Serves 4

500g raw lamb steaks cut thin
2 cups raw pumpkin diced
1 tsp red curry paste
1 tsp crushed ginger
1 tsp crushed garlic
1 red capsicum cut in strips
1 cup green beans
few shallots cut into pieces
2 tsp chicken stock (2 cups of both broth if you can)
2 tsp soy sauce
1 tbls fresh coriander chopped
1 tbls honey
1 x 375ml can coconut milk
olive oil

Method


Microwave pumpkin pieces for a few minutes – not too soft, drain and leave to side.
Coat large fry pan with olive oil, sauté lamb with curry paste, garlic and ginger for a few minutes.
Add vegetables and cook for another couple of minutes.
Add bone broth, soy sauce, coriander and honey in and stir.
Add coconut milk into the pan and stir until boiled.
Add pumpkin in and serve.

*I serve on smashed cauliflower or rice for the family.
