Lamb and sweet potato salad
* very nutritious meal.
Serves 4
2 x 250g lamb backstraps, trimmed or lean lamb strips
250gm sweet potato, thinly sliced
1 baby cos lettuce
1 punnet cherry tomatoes
½ red onion
Dressing:
2 tbs honey
2 tbs Dijon mustard
4 tbs olive oil (and some for brushing)
1 tbs red wine vinegar
1 clove garlic
crushed sea salt & black pepper to taste
Method
Use a bit of olive oil to brush lamb and sweet potatoes and then place on a heated char grill and cook for a few minutes each side, take lamb off to rest and slice if you used backstraps.
Make the dressing
Place the lettuce, tomatoes and onions in a bowl and pour dressing over to coat.
Set out evenly on 4 plates and then share the potato and lamb over the salad.
Simply then enjoy.
*Lamb can be replaced with lean chicken.
*Perfect lunch or dinner after workout. (sweet potato great for potassium, and lamb for protein)
*High in fat but good fats due to olive oil and therefore make calories high, but these aren’t bad calories.
