Hash browns

* snack or maybe with eggs for breakfast.

Serves 1

1 sweet potato, peeled and chopped into two large pieces
½ zucchini grated
1 tsp LSA (linseed, soy and almond mix)
salt & pepper to taste
2 tsp coconut oil
lemon juice

Method


Steam potato until half cooked, then once cooled grate.
Mix the zucchini, potato and LSA then season to taste.
In a non-stick pan heat oil and place the spoonfuls of mixture into pan and flatten.
Cook each side until brown, and continue until all mixture is used.
Serve with lemon juice.

*great add on for breakfast.
*good mid afternoon snack with some smashed avocado.
*nice with a green salad.
