Grilled stuffed zucchini
* excellent for lunch or light easy dinner.
Serves 2
2 zucchini cut in half lengthways
½ red onion diced
¼ red capsicum diced
95g tin tuna lemon flavour or springwater
2 tbls ricotta or cottage cheese
squirt lemon juice
olive oil
Method
Scoop out flesh from the zucchini about 1cm away from skin, then spray and cook this under grill with cut side up, for 5 mins
Mix all the ingredients together along with the middle of zucchini you scooped out and place this all in the centre of the zucchini.
Place back under grill for another 10 mins, until brown.
*if you would like a tomato chutney on the side cook a tomato in a non stick saucepan and add a dash of balsamic vinegar and cook on low to reduce down tomato. Very tasty to have with zucchini.
