Green zucchini fritters
* no need for a boring lunch.
Makes 24 fritters
500g zucchini
1 bunch parsley
1 bunch mint
1 cup green peas (thawed if frozen)
4 spring onions or slices of red onion
lots of black pepper
zest from lemon
3 eggs
¾ cup almond meal
1 tbls olive oil
sea salt
Method
Grate the zucchini and then squeeze out excess moisture, this is a must.
Place the zucchini in a large bowl, add parsely, mint, peas, spring onion, pepper, lemon zest, eggs and almond meal.
Mix until well combined.
Spoon mixture into the medium heated frypan and cook on each side for a few minutes. (If crumbling add a bit more almond meal)
*serve with a little bit of low fat greek yoghurt on top with finely chopped cucumber.
*perfect for lunch with salad on the side.
