Green bean salad

* great served with lean steak, grilled chicken or salmon.

green bean salad

350gm green beans
½ red onion thinly sliced
2 radishes thinly sliced
½ block/75gm low fat feta cheese
some fresh oregano
2 tbls red wine or rice wine vinegar
5 tbls olive oil
6 cherry tomatoes halved
Pepper to taste

Method


Steam the beans, once cooled add onion, radishes and cheese.
Sprinkle oregano and pepper
Whisk oil and vinegar together and drizzle over salad
Place on the cherry tomatoes and serve.
