Fruit and nut bars
*breakfast/snack/lunchboxes/take-a-plate/breastfeeding-friend
3 cups of your preferred nuts (I use almonds, cashews and macadamias)
1 cup dried fruit (I use goji berries, cranberries and raisins)
½ cup almond meal
½ cup shredded coconut
1/3 cup coconut oil (melted)
120g mayvers nut spread or almond butter (melted)
1 tsp vanilla extract
2 tbls honey dash
sea salt
METHOD
1. Preheat oven to 160oC and line slice tray with baking paper, place nuts on there and bake for 5 minutes.
2. Place nuts in food processors and roughly chop.
3. Place all the ingredients into a bowl and mix well.
4. Press into the slice tray prepared earlier.
5. Refrigerate for 2 hours.
6. Once set cut into 16 bars or smaller if sharing plate.
*If you want to use activated nuts (soaked 4hrs and then toasted/ baked 45 mins) you don’t need to toast the nuts again, just chop them in processor.
*These are a great idea when you need to take a plate, just cut smaller pieces, if a friend of mine is breastfeeding; it’s a good snack for them with the natural fats. *Perfect for lunch boxes as there is no additives or preservatives.
*These are freezable.
*Lasts in a sealed container in fridge for 7 days.
