Frozen Berry Yoghurt Bars
Makes 12 serves
Base
1 cup macadamias
1 cup coconut flakes
1 cup almonds
1 tbsp honey
1 tsp cinnamon
Blend the nuts and coconut flakes together in a food processor until fine. Add in the honey and cinnamon then blend to incorporate.
Spread evenly over the bottom of a lined loaf tin and set in the freezer for approx. 30 mins.
Filling
2 cups natural yoghurt
1 tbsp honey
1 tsp vanilla extract
Mix all other ingredients together in a bowl. Pour filling over the hardened base & place back in the freezer for around 1 hour before adding the topping.
Topping
1 cup berries (if using frozen, make sure they are defrosted first)
2 tbsp natural yoghurt of choice
Blend ingredients in a food processor until smooth.
Pour over the top of the yoghurt filling in the loaf tin and place back into the freezer. Slice when frozen.
