Fig and Walnut Bread

Ingredients:

1 tbls flaxmeal
230gm filtered water
150gm dried figs
50gm dried apricots
100gm walnuts
2 tsp dried instant yeast
Extra virgin olive oil
340gm plain flour (or spelt flour)
2 tsp mixed spice
1 tsp salt

Method:

 

  1. Place flaxmeal and 3 tbls water in a dish and set aside for 30 mins
  2. Place figs, apricots and walnuts into a mixing bowl and chop for 5 1 10 secs until chopped into little bits – set aside
  3. Place remaining water and yeast into a saucepan and heat for 3 mins 37oC, stirring to dissolve.
  4. Grease loaf tin (25 x 11 x 9cm ) and a large bowl with oil.
  5. Add all remaining ingredients, including chopped fruit and flaxmeal mixture and mix. Knead for 3 mins. Transfer into prepared bowl, cover with tea towel and set aside in warm place to prove for hour or until dough has doubled in size.
  6. Preheat oven to 180oC
  7. Turn out dough onto silicon mat or floured surface and knock the air out. Place dough into prepared tin and let it sit for another 30 minutes.
  8. Bake for 4-45 mins (180oC), until loaf sounds hollow when tapped underneath. Transfer onto a wire rack to cool completely before serving.
